Salt, biltong and the late braai

Evening braai table

South Africans understand salt. We put it on the fire, in the snack drawer, on the biltong hook. We talk less about what salt does after 18:00 to a man whose nights are already broken.

Sodium holds water in tissues. When you lie down, some of that water returns to the bloodstream. The kidneys see extra volume. The bladder fills. You wake and blame the glass of water you had at 20:00, though the real load was a packet of biltong during extra time.

What is “a lot” on a Saturday

A modest strip of biltong at lunch is not the enemy. The pile next to the coals after dark is. Bottled sauces, packet gravies, chips, processed sausages — they stack. You do not need a laboratory. You need to notice that thirst after a braai is often salt, not virtue.

A test that does not ruin the weekend

Heat, sweat and the false catch-up

A January Saturday in Gauteng makes you sweat and then drink late. Sweat is salt leaving. Catch-up water at 21:00 plus leftover salty meat is a double hit. Drink through the afternoon. Eat the steak. Leave the midnight raid on the fridge.

Herbal tea does not unsalt a meal. It can replace a sugary cold drink. Pumpkin seeds in a bowl beat another processed snack. None of this is a hospital. It is a quieter 02:00.

Ready sauces, cheese and the “just a nibble”

Bottle gravy, packet soup stirred into mince, a block of yellow cheese to the series — they stack with biltong. You do not need a milligram count. You need to notice thirst after supper that is not from heat alone. If the seven-evening test changes nothing, bring the notes anyway: a clinician would rather see “salt unchanged, nights unchanged” than a shrug.

Biltong at lunch versus biltong at extra time

A modest strip at midday, with water, with a tomato, is food. The same meat during extra time is sodium on a night shift. The country does not need a ban. It needs a clock. Put the hook out at lunch. Put the leftover pack away before the second half. If guests arrive with a packet, put a bowl of nuts next to it and let people choose. You are not the police. You are the person who writes 02:00 if you finish the packet.

Dry wors, processed sausages, packet gravies and “just the salty crunch” are the same family. Count them as evening salt even when they feel like culture. Culture can happen at 14:00.

Thirst after a braai is usually salt

You sweat, you eat salt, you drink late. The story feels like virtue: “I hydrated.” The kidneys see a delayed load. Drink through the afternoon. Keep a jug on the table from the first chop. After dark, sip. If you are still thirsty at 21:00, it may be sodium, not a moral need for a litre. A small glass, then bed prep, beats a bottle on the sofa.

Chips, cheese and the television

The family bag is designed so a handful never ends. Portion into a bowl once. If the match is long, refill once, not from the open bag. Yellow cheese, flavoured popcorn, packet soup dunked as a late snack — same stack. The evening nut bowl exists so the hand has somewhere to go that is not a sodium bomb. Nuts still have calories. They have less of the night-shift salt.

What a seven-evening test looks like in writing

Day, salty snack after 18:00 yes/no, night trips, weak stream or full. Seven lines. If trips drop, you have a lever you can keep without becoming a diet person. If they do not, you still have a page for the GP, plus whatever else you noted about coffee and beer. Do not add a new supplement in the same week as the salt test. You will not know which change did what.

What sodium is doing while you watch extra time

Salt holds water in tissues. You do not see it in the glass. When you lie down, some of that water returns to the blood. The kidneys see extra volume. The bladder fills. You wake and blame the sip at 20:00, though the load was a packet during extra time, a bottle sauce, a second sausage, a block of yellow cheese. The glass was visible. The sodium was not.

Thirst after a braai is usually this, not virtue. Sweat took salt out. The packet put salt in. You drink late. The kidneys work the night shift. Drink through the afternoon. Keep a jug on the table from the first chop. After dark, sip. If you are still thirsty at 21:00, a small glass then bed prep beats a bottle on the sofa.

A map of the snack drawer

Biltong at lunch, with tomato, with water, is food. Biltong at extra time is a night-shift. Dry wors, processed sausages, packet gravies, flavoured popcorn, “braai mix” nuts with a salt crust, chips in a family bag, cheese to the series — same family. You do not need milligrams. You need to notice which evenings the drawer won.

Portion into a bowl once. Refill once if the match is long, not from the open bag. The evening nut bowl exists so the hand has a place that is not a sodium bomb. Nuts still have calories. They have less of the night-shift salt. If you have a nut allergy, pumpkin seeds only, or skip the bowl and drink water earlier instead of inventing a new crunch.

Shop sauces, takeaways and the “I didn’t cook”

Weeknights without a fire still have salt. Packet soup stirred into mince. Bottle gravy. Pizza at 20:00. A drive-through on the way home from the N1. None of these are sins. All of them are evening sodium if they happen after 18:00 on a week you already wake twice. Move the takeaway earlier. Ask for sauce on the side and use less. Eat the leftover pizza at lunch tomorrow, not at 22:00 because it was there.

Pap and potato are not the problem. The problem is the second processed meat and the bottled sauce. Tomato stew, a tin of fish, vegetables with olive oil — grocery food, not an imported powder. Read everyday food if you want the weekday plate without a Saturday speech.

The seven-evening test, written so you cannot cheat it

Evenings one to seven: no chips after 18:00, no second processed meat, no family bag, biltong only at lunch if at all. Keep caffeine and beer hours as they were, or you will not know which lever moved. Pad: date, salt after 18:00 no, night trips, weak or full. If trips drop, you have a lever you can keep without becoming a diet person. If they do not, you still have a page for the GP. Do not add a new supplement in the same week. Do not also quit coffee “to help”. One test.

If you break on Saturday, write “braai, packet, three trips”. That line is still useful. Start Sunday. A test with one honest breach is better than a perfect diary you invented on Monday morning.

Hosting without policing the table

Put water out from the first hour. Put nuts next to the packet. Eat your own plate when the first meat is ready. Stop alcohol on your own clock. You are not required to finish the crunch because a guest opened it. You are not required to make a speech. Hospitality is fire, chairs, enough food. It is not a sodium contest at 22:00.

If you are a guest, eat, drink water, stop early, skip the midnight fridge in someone else’s house. Drive only if you are safe to drive. The prostate lecture can wait. The bladder will not.

Heat, sweat, cramp and the false litre

People worry that cutting evening salt will cramp them after a hot day. The usual gap is water and salt in the afternoon, not a packet at extra time. Drink through the working hours. Eat a proper lunch. If you have a heart or kidney condition, or you have been told to restrict or increase sodium, this test is not yours to invent from a website. Ask the clinician who set the rule.

January Saturday: sweat, fire, friends, leftover meat. Eat the steak. Leave the raid. Catch-up water at 21:00 plus leftover salty meat is a double hit. The fire can stay. The clock can still be a clock.

Children’s snacks and your hand in the same bowl

The house will have chips because children exist. Portion yours before the programme starts. Sit further from the bag if you must. This is not a personality. It is a hand. The night does not care who bought the packet.

Read night waking if you want residual urine, tablets and when to book. Read beer timing if the loud nights follow pints more than packets. Read evening habits if you want the whole sequence. None of those pages bans biltong. All of them put it in daylight when the night is the complaint.

A weekday salt map, not only Saturday

Breakfast: a pinch on eggs is not a packet. A processed sausage is. Lunch: a modest strip of biltong with tomato and water can live here. A family bag of chips at the keyboard cannot, if you already wake twice. Afternoon: the foyer bun, the packet in the car, the “I skipped lunch” raid. Evening: bottle sauce, second meat, cheese to the series, extra-time crunch. You do not need a dietitian’s printout. You need to see that Tuesday can be as salty as a braai without a fire.

Takeaways: pizza, fried chicken, a burger with a packet of chips — evening sodium if they land after 18:00. Move them earlier when you can. Sauce on the side. Leftovers at lunch tomorrow. None of this is a personality. It is an hour.

Pap, potato, rice and the thing that is not starch

Men blame pap when the night is loud because starch is visible on the plate. The kidneys are more interested in the sauce and the processed meat. Eat the pap at lunch or at 18:30 with vegetables and a tomato stew. Skip the bottle gravy. Skip the second sausage. The night may quiet without you becoming a person who “doesn’t eat carbs”. If a clinician has you on a different carbohydrate rule for diabetes, that rule wins. This page is salt timing, not a war on pap.

Cheese, packet soup, stock cubes, “just a nibble”

Yellow cheese to a series is a nibble that does not end. Packet soup at 20:00 is a salty warm drink plus a meal. Stock cubes in mince add up. Flavoured popcorn is a packet. Instant noodles at 21:00 after a late meeting are a salt bomb with a costume. Write “nibble” if that is the honest word. The pad does not need a milligram. It needs yes or no after 18:00.

If you cook for a family that wants flavour, use tomato, pepper, herbs, lemon, garlic. Taste before you add the cube. You will not make restaurant food. You will make a Tuesday that is less of a night shift.

When cutting salt is not yours to invent

Heart failure, kidney disease, some blood-pressure plans already have a sodium number. Do not run a seven-evening test against a clinician’s rule. Ask them how evening packets fit. Water tablets still fill the bladder at night if you take them at night — that is a timing question for the prescriber, not a reason to eat more biltong “to compensate”. If you cramp after heat, the usual gap is water and food in the afternoon, not extra-time salt. If you faint, if your legs swell, if you cannot pass urine — not a snack essay. Care now.

Leftovers at midnight are still Saturday

The fridge at 23:00 after guests leave is the second braai. Cold sausage, salty gravy, a strip “so it doesn’t waste”. Wrap it. Eat it at lunch. Waste a little if you must. The night is more expensive than a strip of meat. If throwing food away sits badly, portion the leftover into lunch boxes before you sit down for the last hour. Hands that pack boxes do not raid.

The nut bowl is the other hand-job. Use both: boxes for leftovers, bowl for the match. Neither melts fat overnight. Both change 02:00 when salt was the lever. Write the week. If nights stay loud with salt quiet, the lever is elsewhere — coffee, beer, residual urine, tablets, apnoea. That is why the night-waking pad has more than one column.
